Casa del Sol originally opened in February 1997. It has been a staple in the Nyack community for nearly 2 decades. Tom Lynch (one of the original Casa employees) and his wife Kathryn recently purchased the restaurant from the previous owners. Tom & Kathy hired chef Mark Machacek (a 1998 graduate of the Culinary Institute of America). Tom and Kathy along with chef Mark and manager Nancy Safran developed a new menu for Casa del Sol. Still serving Mexican Faire, the new menu has some great new dishes such as Short Rib Quesadillas, Brisket Burritos and Mexican Lollipops (home made chorizo, with pineapple, wrapped in bacon). Casa offers 14 different types of tacos to choose from. The tacos can be ordered as a single taco or as a dinner with multiple sides to choose from (Mexican Street corn, refried beans, yuca fries just to name a few). The new menu also features more vegetarian options as well, such as seasonal veggie tacos, portobello mushroom tacos, brown rice and steamed spinach.
